Lime Ginger Cookies

These are amazing! I've made them twice in one week and I'm absolutely in love with them!


Ingredients:

1 cup softened butter
1cup sugar, plus extra for rolling dough in sugar
1 egg
1/2 teaspoon baking soda
2-1/3 cups all-purpose flour
1 tablespoon grated lime rind
3/4 teaspoon ground ginger

Put butter and sugar in a medium-sized bowl and cream until light and fluffy. Add egg and beat until incorporated. Then add baking soda and flour little by little.


Then add grated lime peel and ginger. Roll dough into balls and roll the balls in the additional sugar. You can also mix 1/4 teaspoon ginger into the sugar to roll the balls in. Squish balls with the bottom of a cup. Bake at 350 for 8-9 minutes or until edges are slightly browned. 

You can also sprinkle some extra grated lime peel on the top if you want too.

No Bake Cookies

These are my very favorite cookies. Of course they are........ They're chocolate!!!!



Mmmmm!!!



Ingredients:

2 cups sugar
1/2 cup butter
4 tablespoons cocoa
1/2 cup water
1/2 cup peanut butter
1 teaspoons vanilla
 3 cups oats

On medium heat, mix in saucepan: 2 cups sugar, 1/2 cup melted butter, 4 tablespoons cocoa, and 1/2 cup water. Stirring constantly, cook until it comes to a boil, and then cook it for 2 minutes. Remove from heat, and add 1/2 cup peanut butter. Stir until blended, then add 1 teaspoon vanilla and 3 cups oatmeal. Stir until glossy. Spoon onto waxed paper, or pour into pan and cut. Let it dry.  Then....Viola!!!!!

Can't put' em down sugar cookies!

 These sugar cookies are melt in your mouth good! Sometimes we just
 need those sweet things in life!













Ingredients:

1 cup butter
1 cup oil
1 cup powdered sugar
1 cup white sugar
2 eggs
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon vanilla
4 cups flour


 Preheat oven to 350 degrees. Mix your butter, sugar, vanilla and eggs. Then add the oil. Add the remaining flour mixture. ( Powdered sugar, baking soda, cream of tartar, and flour.) Roll into balls and dip in sugar. Mash with glass that has been dipped in sugar. (Cocoa can be added in place of 1/2 cup flour. You can also add nuts.)   Bake for 8 - 10 minutes and cool on a wire rack.  Mmmmm! Hope you enjoy these!
